Heya's :)

Welcome to the Mummy's Yummy Tummy's blog.  This blog is all about uploading easy basic healthy recipes that you and your children can make together for something to do, or just a quick and easy healthy dinner you can make.  These simple health easy dinners are yummy yummy in your tummy :) check out the yummy yummy in tummy song at https://www.youtube.com/watch?v=emBG3RkUnBA


We will update new recipes every few days and put links onto our Facebook page and vise-versa.  Video demonstrations on how easy it easy to cook simple healthy recipes will also be created.  

We hope you will also share any easy healthy recipes, suggestions, what you found works and what does not work.  Basically all help and support each other as we learn and discover new skills.  Feel free to leave comments and start discussions between yourselves and if you have any questions for us we will get back to you as soon as possible.

Easy Healthy Recipes
Here is a few easy healthy recipes you can try yourself at home.

Homemade Chicken Nuggets and Wedges: 
Ingredients: Chicken pieces
                     Brown and White bread (2-3 slices) make into crumbs by grating or in food blender
                     Beaten egg
                     Flour (plain flour)
                     Potatoes
                     Oil
                     Salt + Pepper
                    Garlic (crushed/ chopped)(optional)
                     Herbs (Parsley)

How to make chicken nuggets and wedges

Nuggets
  •  Put three bowls in front of you. One with flour, next one with beaten egg and finally third one with breadcrumbs.  
  • With the chicken pieces, pick up chicken coat in flour in the bowl, followed by dipping into beaten egg bowl and finally rolling in breadcrumbs.
  • Place the nugget onto baking tray, ready for baking.
  • Once all nuggets are prepared you can cook at 180 degrees for 20 mins (different times may apply for different ovens.)
Wedges
  • To make the wedges, peel and slice potatoes into quarters and cut again to desired size.
  • Place into large bowl, drizzle roughly 4 tablespoons of oil over potatoes and shake.
  • Add salt and pepper, garlic and parsley and shake again.
  • Put wedges in tray.
  • Cook at 180 degrees for 30-45 mins depending on oven.
As they take longer to cook compared to the nuggets but wedges in first.  Once cooked and some sweetcorn or peas.

Simple Smoothies:
Ingredients:  Banana- 1 or 2
                      Strawberries- Handful
                      Honey - 1 Tablespoon
                      Natural Yogurt/ Ice-cream  
                      Fruit juice (apple/ orange) 1 glass
                      Ice.

How to make it
  • Add chopped strawberries, banana, yogurt/ ice-cream, fruit juice, honey into blender.
  • Blend mixture until you get desired effect.
  • Add ice and blend again for minute.


If you have remaining mixture left over, don't worry it can be frozen and made as ice-pops for the children. This is a great way to get children to get fruit into them as some kids are fussy eaters, yet when it comes to that something nice they will happily eat anything :) 



Coddle:
Ingredients:  Sausages (amount depends on family size)
                      Rashers (amount depends on family size)
                      Carrot's
                      Onion
                      Chicken Stock ( Oxo cube with boiling water)
                      Potatoes.

How to make:
  • Heat a little oil in pan, add chopped onion and carrot's to pan for few minutes to soften them .
  • Make your chicken stock  and slowly pour little by little over the vegetables.
  • Once stock is in pan, add your rashers and sausages.
  • Bring to boil, and leave to simmer on lower heat for 30 minutes.
  • While coddle is simmering, peel and chop your potatoes.
  • Place in saucepan of water and bring to boil for 30 minutes.
  • After potatoes are cooked, drain water and add salt, butter and little bit of milk and mash to a creamy texture.  If you or your children don't like mashed potato just serve with boiled potato instead. 
Fruit Kebabs: 
This is a real simple recipe, that will get kids eating the fruits they like and getting them to explore new fruits also.

Ingredients:  Any fruit you want to use (banana, apples, strawberries, peaches, grapes,                
                      blackberries, kiwi, raspberries, orange pieces, melon, pineapple and so on)
                      Ice-pop sticks/ skewers (pointy end removed)
                      Ice-cream, yogurt (any flavour) to dip fruit skewers into.


This fruit map is a great way of getting kids to see and pick out different fruits they want to put on their kebabs :)


Soup Recipe.
 Avail of this weeks Aldi's special veg offers courgettes 2 pack 69c makes a delicious soup for these cold days here is a simple quick courgette soup recipe. ingredients: 6 courgettes,glove of garlic,Aldi cream cheese, 1 potato, 1 onion, 1 Oxo
chicken cube. method: wash an chop courgette peel an chop onion an potato, peel an chop garlic add water and Oxo cube simmer for 20 minutes add cheese just before blending. Woola creamy tasty fresh feel good soup! did you know garlic contains extracts that kills viruses responsible for colds and flu  top tips for top kids!
                     



Stew Recipe:
Ingredients:  Lamb/ Beef/ Chicken.
                      Carrot's
                      Onion
                      Oxo cube (Beef/ Chicken) to a pint boiling water
                      Potatoes
                      Flour- 2 tea spoons
                      Tomato Puree- 2 table spoons

How to make:
  • Heat oil in pan, add meat and brown for few minutes
  • Add chopped veg and cook until softened.
  • Remove from heat and slowly sprinkle 2 spoons of flour over meat and veg little by little and stir really well.
  • Slowly add in stock, little by little.  Must add in slowly otherwise will go lumpy, by adding slowly it will give a smooth non lumpy sauce.
  • Once starts to boil, and in 2 table spoons of tomato puree and stir.
  • Bring to boil and reduce to simmer for 30-40 minutes.
  • While stew is boiling, peel and bring potatoes to boil.  You can  ash once boiled or just leave as boiled potatoes, however kids tend prefer buttery mash potatoes.


Home made Meatballs or Burgers:
Ingredients:  Beef/ Lamb/ Pork mince
                      1 slice of bread (made into crumbs in blender)
                      1 egg
                      Salt and Pepper
                      Herbs if desired (parsley, basil, etc.)
                      Squirt of tomato puree
                      Onion- chopped real small
                      Mushrooms- chopped real small

How to make:
  • Add all ingredients into large mixing bowl and mix real well.
  • Take a small spoon and spoon out small pieces of mixture and roll into balls.
  • Place small amount of oil on tray and pre-heat in oven for 5 minutes.
  • Place meatballs in tray and cook for 40-50 minutes, depending on size of your balls.
  • Personally I add tomato and basil sauce and pour over meatballs when cooked and serve.
  • Can be served with pasta, chips, rolls or on a naan bread.
  • Sprinkle cheese over it and your done.
This is a easy quick dinner to make and I have found my kid prefers home made meatballs to shop bought and they are so much healthier 










Weekly Special in Aldi this week 3rd December 2012.
This weeks Aldi tomatoes 6 for 69c onions 3 for 69c. 
How to make: 
  • Wash and chop onion add fresh garlic add a couple of packs of chopped tomatoes simmer till soft. blend in a cream cheese and bobs your uncle your own fresh pasta sauce! 
  • Boil pasta and add in your sauce as a stir in without the salt u find in jars of pasta sauce. This can be frozen an used as needed. You can also use as a pizza base to make your own pizza or maybe add chicken an throw into a wrap for fajitas  whatever way u like it this is a cheap way to enjoy pasta sauce u made yourself!



Lidl 
If u are passing Lidl an want to  add red peppers for extra flavour an get more hidden veg into the kids red peppers are only 29 cent this week!



Lasagna:
Ingredients: Mince
                     Carrot's (chop into samll pieces)
                     Onion (chop small or grate if kids are very fussy about eating veg)
                     Mushrooms (chop really small will shrink smaller when cooking)
                     Garlic (chop or crush)
                     Homemade tomato sauce (see above recipe)
                     White sauce
                     Lasagna (pack of sheets is 50 cent in Tesco)
                     Grated cheese

How to make:
  • Heat a little oil in saucepan, when oil heated add the carrot's, onion's, mushrooms and garlic.  Cook for few minutes until softened.
  • Add the mince in saucepan and cook till meat is brown.
  • Add your homemade tomato sauce (see recipe above)
  • Bring to boil, then simmer for  30 mins.
  • Once meat mixture cooked, prepare you lasagna.
  • You can layer like: 1- mince mixture
                                           2- pasta sheets
                                           3- white sauce (pour over pasta sheets)
                                           4- mince mixture
                                           5- pasta sheets
                                           6- white sauce (pour over sheets)
                                           7- Sprinkle grated cheese over white sauce
  • Cook at 180-200 (Depending on oven) for 1 hour
This is a great dish for getting veggies in that the little ones might not eat normally for you.


Chicken and Broccoli Bake

Ingredients:   u will need broccoli (69c Aldi) chicken fillets (6 for 5 in Aylsbury butcher) tin of   condensed chicken soup. bread crumbs(grated heels) 
How to make:
  • boil chicken an drain an cut into bite size pieces. leave to side. cho
    p an boil broccoli drain an leave to side.
  • put chicken an broccoli into an ovenproof dish add tin of soup an some milk mix up sprinkle breadcrumbs over top
  • cook in oven for 20 minutes. serve and enjoy!!



  • Another great thing to add to this dish is pasta and you have a complete dinner.  B adding boiled pasta you make this a chicken and broccoli pasta bake which kids love too
